Matcha is a powdered green tea made from specially grown and processed tea leaves. Instead of steeping the leaves and removing them, you drink the whole leaf in powdered form.
That means matcha has a fuller body, a more concentrated flavor, and a preparation method that involves a whisk, a bowl, and a small but satisfying amount of effort.
Matcha 101
Matcha’s journey from China to Japan is often told through one monk: Myoan Eisai.
Eisai was a Japanese Buddhist monk who traveled to Song dynasty China to study Zen. When he returned to Japan in the late 12th century, he brought back more than religious texts and temple discipline. He also carried tea seeds, tea customs, and the idea that tea could help sharpen the mind.
A practical souvenir, really. Much better than a fridge magnet.
In Song China, powdered tea was already part of refined tea culture. Tea was ground, mixed with hot water, and whisked into a frothy bowl. For monks, it was not simply a pleasant drink. It helped with focus, clarity, and long hours of meditation — because even enlightenment, apparently, benefits from caffeine.
Eisai helped introduce this way of thinking about tea to Japan. He later wrote Kissa Yōjōki, a short work on tea and health, helping establish tea as something more than refreshment. It became a practice. A discipline. A quiet tool for returning the mind to the present.
Over time, Japan transformed powdered tea into what we now know as matcha: more refined, more ritualized, and deeply connected to Zen, hospitality, and the tea ceremony.
Matcha’s umami is not marketing magic. It is chemistry — which is much better, because chemistry usually has the courtesy to explain itself.
The savory depth in matcha comes largely from naturally occurring free amino acids, especially L-theanine, glutamic acid, and aspartic acid. In food science, these compounds are associated with the round, brothy, mouth-filling taste we call umami. Catechins and caffeine bring bitterness and astringency, while amino acids help balance that edge, giving good matcha its smooth, savory structure rather than the taste of grass having a difficult afternoon. Research on tea chemistry shows that tea umami is mainly driven by amino acids such as L-theanine, glutamic acid, and aspartic acid, and that amino acids can also reduce the perceived bitterness and astringency of catechins.
That is also why matcha feels different from many other caffeinated drinks. Because matcha is powdered whole tea leaf, you consume more of the leaf’s natural compounds than you would in a simple steeped tea. Its key bioactive compounds include caffeine, L-theanine, catechins such as EGCG, chlorophyll, and other polyphenols. Caffeine contributes alertness; L-theanine is studied for its role in relaxation and attention; and catechins are widely discussed for their antioxidant activity. Together, they help create what many people describe as a calmer, more focused kind of energy — less like being shouted awake, and more like being gently reminded that you do, unfortunately, still have things to do.

What Makes Matcha Good?

Matcha is sensitive to air, light, heat, and humidity. Keep it sealed, cool, and dry. It is dramatic, but for good reason.
